dc.description.abstractIndia is the largest milk producer in the world with the milk production of 91.1 million tonnes (Narang, 2004). About 55% of the milk produced in the country is converted into various products mainly Traditional Dairy Products and the share of western products is about 5-6% and the rest being used as fluid milk (Sindhu et al., 2000). Traditional milk products play a significant role in the economic, social, religious and nutritional well being of the Indian masses
