Abstract
Street vendors selling roasted and boiled corn cobs can be seen commonly at public places, exhibitions and on sidewalks in India. Roasted and boiled corn cobs are liked and relished by people of all ages. Unlike the case of popcorn vendors who have the popcorn making machine, the vendors who sell roasted and boiled corn don’t have any technological advantage for carrying out their business. This imparts drudgery and poor energy efficiency on these street vendors of India. Developed nations possess automated machines to roast and boil corn cobs whereas there is a need to address the plight of Indian street vendors by developing a system that is affordable for them and also roasts and boils corn cobs simultaneously. A portable corn cob roaster cum boiler was designed and developed for Indian street vendors and its performance was evaluated. The maximum capacity of the system is 135 corn cobs per hour and it can simultaneously roast and boil 6 and 9 corn cobs (Zea mays var. indentata) within average durations of 4.2 and 12.4 minutes respectively for a charcoal feed rate of 2.6 kg per hour. The average heat utilization factor of the system is 0.53 and 0.66 under no load and full load conditions respectively. Its average thermal efficiency is 21.24 per cent. On the 9-point hedonic scale, sensory evaluation of the corn cobs roasted and boiled by it yielded the results that in terms of overall acceptability, the former was liked moderately and the latter was liked extremely. The price of the functional prototype is Rs. 14200/- and the net present worth, benefit cost ratio, internal rate of return and payback period of the street vending business enabled by it are Rs. 2732757/-, 1.065, 2432.13 per cent and 0.041 years respectively. The portable corn roaster cum boiler can contribute significantly to the socio-economic development of Indian street vendors.
