Abstract
"Koozh" in Tamil is a popular fermented beverage prepared using flnger or Pearl millet in combination with broken rice. Since its consumption is reduced due to changing lifestyle, an attempt has been made to avail this in Ready to Serve form using retort technology. Koozh is prepared by fermenting the millet flour for 8-10 h and cooked with broken rice which is again fermented for 15-18h.
