dc.description.abstractChevon packed under modified atmosphere (80 % O2 + 20 % CO2), vacuum and aerobic packaging and stored at 4 ±1⁰C up to 21 days were investigated. The results revealed that the total viable and coliform count were significantly lower in Modied atmospheric packaging (MAP) than vacuum and aerobic packaging. There was no signi cant difference in lactic acid bacteria between different packaging methods; however vacuum packaging had higher counts than other methods. Streptococcal, Staphylococcal, Lactobacillus, Anaerobic, yeast and mould counts differed significantly between storage periods. The ndings revealed that chevon could be preserved safely up to twenty one days in MAP and fourteen days in aerobic and vaccum packaging.en_US
