Abstract
Chevon packed under modified atmosphere (80
% O2 + 20 % CO2), vacuum and aerobic packaging
and stored at 4 ±1⁰C up to 21 days were
investigated. The results revealed that the total
viable and coliform count were significantly
lower in Modied atmospheric packaging (MAP)
than vacuum and aerobic packaging. There was
no signi cant difference in lactic acid bacteria
between different packaging methods; however
vacuum packaging had higher counts than
other methods. Streptococcal, Staphylococcal,
Lactobacillus, Anaerobic, yeast and mould
counts differed significantly between storage
periods. The ndings revealed that chevon could
be preserved safely up to twenty one days in
MAP and fourteen days in aerobic and vaccum
packaging.
