Abstract
A study on the textural improvement of sausage casings from sheep and goats with chemical bleaching agents was made. Treatment with 2.0% sodium carbonate solution for 24 hours it was found to be superior in improving the ‘feel’, ‘appearance’ and ‘strength’ of casings.
