Abstract
In recent years, much attention has been paid to
improve the meat products quality with various functions and
nutritive value to promote health conditions and prevent the
risk of diseases. Processing of meat to value added products
contribute to sustained demand for meat and efficient
marketing of meat to earn reasonable returns from meat
animals by the farmers.
