Abstract
Experiments were conducted to study some selected engineering properties (like weight, length, width, thickness, geometric mean diameter, equivalent diameter, Sphericity, specific area, 1000 kernel weight and volume, true density, bulk density, porosity, angle of repose and angle of friction), sorption behaviour and hydration kinetics of horse gram. Various two parameter (BET, Halsey, Henderson, Iglessias and Chirife, Kuhn, Mizrahi, Oswin and Smith), and three parameter equations (GAB, Hailwood and Horrobin and Modified BET) models were tested for their suitability in predicting sorption behaviour of horse gram. Amongst all the models used, Oswin‟s model described the phenomena in a better way as indicated by the values of R2 and SE. For predicting hydration kinetics, diffusion equations (by assuming shape of horse gram as either sphere or infinite plate) and Verhulst equation were tested for their ability. Verhulst equation described the hydration kinetics of the grain more accurately than the diffusion models.
