dc.description.abstractThe effects of dietary supplementation with chitosan, neem leaf meal and their combination at different levels on quality of breast and thigh muscles of broiler were studied. Two hundred forty broilers (Vencobb) were randomly assigned to eight groups with three replicates of ten birds each and were fed for six weeks. By comparison, there was no significant difference in the mean breast muscle pH between the treatment and the control groups of broiler chickens. The mean breast muscle drip loss at the end of 48h of slaughter, was significantly (p<0.05) highest in the control and antibiotic supplemented birds. The lipid peroxidation level was significantly (p<0.05) lowest in the 0.05% chitosan and in combination of chitosan and neem leaf meal. The birds of T4 and T8 groups showed lowest muscle cholesterol level in comparison with antibiotic supplemented and control birds but with no significant difference in appearance, texture, juiciness, mouth coating and overall acceptability traits among all the groups except for the flavour score which was low in all the neem leaf meal supplemented birds.en_US
