Abstract
Cow’s milk [3-casein is a protein product of CSN2 gene, containing 209 amino acids. There arc many genetic variants of β-casein among which Al and A2 are recurrent which differs only by the presence of histidine in Al and proline in A2 variant at position 67. Due to the presence of histidine, the Al variant is more susceptible to the enzymatic digestion. As a consequence of this enzymatic digestion in the gastrointestinal tract, a bioactive peptide of 7 amino acids known as β-casomorphin 7 (BCM7), is released and absorbed in infants, as their gastrointestinal tract is more permeable As the name indicates, BCM7 elicit an opiate-like activity.
