Extrusion cooking is a high-temperature, short-time process in which
moistened, expansive, starchy and/or proteinaceous food materials are plasticised
and cooked in a tube by a combination of moisture, pressure, temperature and
mechanical shear, resulting in molecular transformation and chemical reactions.
