dc.description.abstract | Functional food is a food which is not only satisfying the nutritional requirements of individual and also to meet out the consumer’s health aspect. In such case the functional ingredients viz., probiotics, prebiotics, omega 3 fatty acids, herbs, fruit and vegetables are being incorporated in to the functional foods. This review is done about fortification of yoghurt with many healthy ingredients viz., probiotics, vegetables, fruits, whey proteins, cereal fibres, omega 3 fatty acids, phytosterols, iron and different herbs and their functionality was discussed. Physicochemical and sensory properties of fortified yoghurt were also discussed. | en_US |
