Abstract
The study was undertaken with an objective to analyze the physical properties, nutrient composition, antioxidant activity, cooking quality and acceptability of seven released varieties (AK42, AK44, DHG01, GPM06, KBHG01, CRHG22 and CRHG23) and five advanced breeding lines (VHG13-01, VHG15, VHG44, VHG935 and VHG938) of horsegram varieties in Department of Food Science and Nutrition, College of Community Science, University of Agricultural Sciences, Dharwad during the year 2017-18. The length, breadth and length to breadth ratio of horsegram varieties varied from 5.57-6.13 mm, 4.13-3.55 mm and 2.93-3.35 respectively. Highest functional properties were observed in DHG01. The variety VHG44 had highest crude protein content (28.21g/100g), in vitro protein digestibility (67.80 %) and antioxidant activity (89.41 % DPPH) and VHG935 had highest crude fiber content (5.26 g/100g) and iron (9.95 mg/100g). The variety VHG13-01 had highest fat, zinc and manganese content. The total, reducing and non-reducing sugar ranged from 4.96-5.92, 0.35-0.41 and 4.33-5.25 mg/100g respectively. The total polyphenols and antioxidant activity ranged from 2.35-3.61 mgGAE/g and 81.31-89.41 per cent DPPH respectively. The cooked weight, cooked volume, cooking time and solid loss of grains without soaking ranged from 22.54-25.59 g, 18.33-22.33 ml, 100.67-129.67 min and 4.16-5.94 per cent respectively whereas, the cooked weight, cooked volume, cooking time and solid loss of grains with soaking ranged from 24.49-28.54g, 24.49-29.00 ml, 40.33-59.67 min and 4.16-5.67 per cent. The overall acceptability score of AK42 was highest in case of boiling compared to other varieties and the variety VHG15 scored highest for pressure cooked grains. Thus, released varieties had higher values for physical parameters i.e, length and breadth and functional properties i.e., hydration capacity, hydration index, swelling capacity, swelling index and per cent germination, whereas advanced breeding lines had higher values for nutrient composition i.e., crude protein, crude fiber, mineral content, in vitro protein digestibility and antioxidant activity.
