Abstract
Fenugreek (Trigonella foeum-graecum L., Family Fabaceae), is a herb with high culinary and medicinal importance. The present investigation was conducted at ICAR-Indian Institute of Horticultural Research, Bengaluru, to standardize a pretreatment for minimally processed leaves, sanitary wash treatment for microgreens and its integration with modified atmosphere packaging to extend the shelf life and maintain the quality.
