    UTILIZATION OF BLACK PLUM (Syzygium cumini) SEED POWDER IN THE DEVELOPMENT OF FUNCTIONAL KULFI

    Therapeutic benefits of black plum seed powder along with stevia was exploited in the present research study by developing a functional kulfi. This functional kulfi was optimized as a frozen product to control blood sugar level. Functional kulfi was developed by 50, 60 and 70 per cent sugar were replaced with 0.05, 0.06 and 0.07 per cent refined stevia extract powder respectively in which 0.05 per cent was optimized, while black plum seed powder was used at the rate of 0.5, 1 and 1.5 per cent. Black plum seed powder was optimized to 1 per cent based on sensory acceptance by expert panel. These functional kulfi were analysed for physico- chemical, textural parameters such as melting rate, specific gravity, penetration value, titrable acidity, TS, fat, protein, and moisture content, yield point, fracturability, hardness and microbiological quality with respect to total bacterial, coliform and yeast and mold counts. From the ancient ayurveda to the recent medicine system black plum seeds were always used for curing diseases among that diabetes is most common, so, as black plum seed powder has potential to reduce blood sugar level, based on this animal experiments were conducted on wister rats to check the efficacy of the functional kulfi and the results were found promising as blood glucose level in treated diabetic rats decreased from 1st day on 173.5 to 28th day on 115.0 mg/dl. Storage studies was carried out with 10 days interval at -18 ⁰C temperature. From the storage studies (-18 ⁰C) it was concluded that the functional kulfi found to be stable for 40 days with respect to its chemical, microbiological and sensory attributes. Thus, a technology had been developed through this research to formulate a functional kulfi by incorporating functional ingredient namely black plum seed powder and stevia there by it could be designated as functional kulfi which adds to the basket of functional food from the dairy sector.
