ThesisItem Open Access DEVELOPMENT OF SHELF STABLE CHICKEN SAUSAGES USING HURDLE TECHNOLOGY(TANUVAS, 2016) Ezhilvelan, S; Appa Rao, V; Robinson, JJ Abraham; Chandran, Daniel Joy; TANUVASA study on the development of shelf stable chicken sausages by the application of hurdle technology was carried out. The study comprised of live experiments in which chicken sausages were prepared with, the following hurdles viz., Water activity [aw] (Reduced to 0.93), pl'l (Reduced to 5.9), Antibacterial (Chitosan), Antioxidant (Ascorbic acid) and Packaging (Vacuum packaging) applied sequentially. Chicken sausages were stored at ambient temperature and the effects of the hurdle applied on the quality of the sausages were studied. There were two controls used, one untreated control, and the other ideal treatment chosen from previous experiment. ( hence, from ll experiment only.)ThesisItem Open Access Effect of Post - Mortem Injection of Calcium Chloride on Mutton Quality(TANUVAS, 1999) Ezhilvelan, S; TANUVAS; Radhakrishnan, K.T.; Thulasi, G; Narahari, DBook chapterItem Open Access ICAR - TANUVAS Electrical StunnerJJ Abraham, Robinson; Appa Rao, V; Narendra Babu, R; Ezhilvelan, S; Santhi, D; TANUVASStunning is the process by which animals are rendered either unconscious or insensible to pain, immediately prior to slaughter by mechanical instruments, gas anaesthesia or electricity. Stunning besides according the obvious beneļ¬t of animal welfare also - Enhances bleeding efficiency - Renders the process of slaughter safer to operatives and animal restraint easier.Book chapterItem Open Access ICAR - TANUVAS Mobile Poultry Processing Plant(TANUVAS) JJ Abraham, Robinson; Appa Rao, V; Narendra Babu, R; Ezhilvelan, S; Santhi, D, et al.; TANUVASAmobile poultry processing plant has been designed such that it in corporates all the necessary features required to ensure hygienic slaughter and dressing of poultry. Further, it obviates the need for extensive requirement for space, and is economical in comparison to establishing a poultry processing retail outlet in a plush market in a city. The unit may also double up as a unit to prepare and market ready to cook chicken products in places where people congregate such as shopping malls and commercial hubs.ArticleItem Open Access A PRELIMINARY STUDY ON DEVELOPING COLLAGEN SHEET AS BIOMATERIAL USING ACID SOLUBLE COLLAGEN EXTRACTED FROM CHICKEN SKIN(2018) Arunmozhivarman, K; Abraham, Robinson JJ; Appa Rao, V; Parthiban, M; Narendra Babu, R; Ezhilvelan, S; Vasanthi, C; TANUVASThe objective of this research work is to extract collagen from the chicken skin and also make an attempt to develop a collagen based sheet as a biomaterial. Consumption of broiler meat level is always high when compared to beef, mutton and chevon because of low cost and no religious taboo in the society. This has lead to increase in slaughter rate and generation of large amount of by-products. In poultry meat retail shop the by-products wastes produced are mostly disposed of into water bodies, free lands which ultimately leads to environmental pollution. Hence in this study, the chicken skin was utilized to extract collagen using acetic acid solubilisation method. The extracted collagen was lyophilized, evaluated for its characteristic quality parameters and collagensheet was prepared with addition of chitosanas biomaterial.
