Abstract
The present investigation was conducted to explore the quality of moth bean (RMO-435) grown under different production systems viz. Organic production system (S1), integrated nutrient management (S2), and organic intensive production system (S3). All moth bean samples were analyzed for their seed weight (25.90 – 27.09 g), seed volume (0.16-0.30 ml/seed), swelling capacity (0.31 – 0.82 ml/seed) and cooking time (7:52 – 8:50 min.). Values recorded for functional properties were recorded to be 0.27 – 0.42 g/g, 1.11 – 1.28 g/g and 6.70% to 8.00% for water absorption, oil absorption and gelation capacity respectively.
