P.An investigation entitled “Studies on utilization of cashew apple (Anacardium occidentale L.) pomace for candy making” was undertaken at the Department of Fruit, Vegetable and Flower crops, Post Graduate Institute of Post Harvest Management, Faculty of Agriculture, Dr. B. S. Konkan Krishi Vidyapeeth, Dapoli, District Ratnagiri, during the year 2013-2014. The study aimed for the preparation and standardization of cashew apple pomace candy along with its storage. For this experiment, the Factorial Completely Randomized Design (F.C.R.D.) was used. The experiment was carried out with five treatments having different levels of citric acids (0%, 0.5%, 1%, 1.5% and 2%). The drying was carried out at 55˚C for 12 hours and the sample was analyzed chemically and organolepticaly during initial, 1, 2 and 3 months of storage. Among the different levels of citric acids, the 1.5 per cent citric acid used for candy making recorded, the highest sensory score for colour, flavour and overall acceptability of cashew apple pomace candy and was selected as the best treatment for candy making.ThesisItem Open Access STUDIES ON DEHYDRATION OF MATURE JACKFRUIT(Artocarpus heterophyllus Lam.)
