The unit operations carried out were; preheating, filtration, standardization, homogenization, pasteurization, concentration and drying. The different feed concentration of 35, 40 and 45% and inlet air temperature of 160, 170 and 180 °C were chosen as independent variables to produce the spray dried goat milk powder (SPGMP). The mixed fruit flavour was added to the concentrated milk prior to spray drying. The proximate composition, functional and reconstitution properties of SPGMP were studied. Numerical optimization was performed using Design Expert software to optimize the process parameters for SPGMP. The optimized SPGMP (concentration of 39% and inlet air temperature of 171 °C) was selected to produce the agglomerated goat milk powder (AGGMP) with different binder concentrations of 0, 0.4 and 0.8% and inlet air temperature (fluidized bed dryer) of 50, 60 and 70 °C. There was no significance difference between the proximate composition of AGGMP and optimized SPGMP. The handling properties i.e., flowability of AGGMP was “good” and reconstitution properties viz., wettability and dispersibility of AGGMP were improved when compared to optimized SPGMP. There was no much significant difference between the solubility of AGGMP and optimized SPGMP. The optimized condition obtained was 0.32% binder concentration and 60 °C inlet air temperature using numerical optimization. The prediction equations were developed and sensory evaluation was carried out for AGGMP and SPGMP. A software programme was developed in MATLAB to compute the heat utilization efficiency of spray dryer. The average particle size of fresh Osmanabadi goat milk, optimized SPGMP and AGGMP using Zetasizer was measured as 311.1, 418.1 and 596.6 nm, respectively.
