Abstract
The present study was conducted with an objective to assess nutritional status of underfive children and development of nutri-rich premixes to combat malnutrition. The study was conducted at Girwa and Badgaon panchayats of Udaipur district of Rajasthan covering eight villages purposively and a total of 400 children of 1-5 years were selected from these villages for the study. A self- structured interview schedule was used to collect the information. Nutritional status of the respondents was assessed using anthropometric measurements (height, weight, MUAC, head circumference and chest circumference), 24 hr dietary recall and clinical observation method. Mean heights and weights of the subjects increased progressively with increase in age. But were significantly shorter and lighter compared to WHO standards. Stunting was observed to be 47.64 percent and 38.27 percent among boys and girls respectively. Further, 40.84 percent of children among girls and 33.54 percent among boys were underweight. About 15.31 percent boys and 16.75 percent girls among the selected children were found to be wasted. Overall percentage of malnourished girls (45.02%) was higher than the boys (38.75%) according to MUAC. According to head to chest circumference ratio overall 36.36 percent children among boys and 38.74 percent children among girls were malnourished. The intake of cereals, pulses, roots and tubers, others vegetables, green leafy vegetables, fruits, milk and milk products were significantly (p<0.05) lower than RDI. Adequacy of roots and tubers and fats and oils was above 80 percent and sugar adequacy was above 90 percent in both boys and girls in 1-3 years age group children. The intake of all food groups were significantly (p<0.05) lower than RDI in 3-5 years children. The intake of all the nutrients was significantly lower than the ICMR recommendations in both the age group children. Total nine (9) types of premixes viz. Dalia mix, Chapatti mix, Sattu mix in the Protein- Calorie rich category, Ladoo mix, Cookies mix, Idli mix in Calcium-Iron rich category and Poori mix, Burfi mix, Halwa mix in Beta-carotene rich category were formulated ii using cereals, millets, pulses, oilseed and vegetable after processing and blending in different proportions and standardized. In Dalia mix, the premix formulated with wheat grits, pearl millet grits, green gram dal and groundnut grits in the proportion of 40:20:30:10, in Chapatti mix, wheat flour, Bengal gram flour, soybean flour in proportion of 60:20:20, Sattu mix formulated using roasted Bengal gram, roasted wheat and roasted ground nut in the proportion of 60:30:10, Ladoo mix formulated with finger millet flour, wheat flour, rice flake, sesame seed and garden cress seed (45:30:10:10:5), Cookies mix formulated using finger millet flour, refined wheat flour, amaranths seed flour, garden cress seed and milk powder (40:25:20:5:10), Idli mix using finger millet flour, amaranths seed flour, black gram flour and garden cress seed (40:25:30:5), Poori mix prepared with wheat flour, carrot powder and curry leaf powder in the proportion of 85:10:5, Burfi mixes formulated using Bengal gram flour and carrot powder (50:50) and Halwa mix formulated with wheat flour, carrot powder and pumpkin powder in the proportion of 35:35:30 were selected and stored in ambient temperature for three months in HDPE packaging. Among Protein-Calorie rich premixes, protein content of Chapatti mix, Sattu mix and Dalia mix was observed to be 20.03 percent, 19.25 percent and 17.24 percent respectively whereas, energy content of Sattu mix was observed to be 404.83 kcal, followed by 381.37 kcal in Dalia mix and 375.67 kcal in Chapatti mix. In Calcium-Iron rich premixes, calcium content of Ladoo mix, Cookies mix and Idli mix was found to be 294.53, 319.80 and 256.41 mg/100g respectively whereas, iron content of ladoo mix was found to be 9.13 mg/100g, cookies mix was 8.89 mg/100g and Idli mix was found to be 10.10 mg/100g. Among Beta-carotene rich premixes, β-carotene content was observed to be 5895.12 μg/100g in Halwa mix followed by 4041.24 μg/100g in Burfi mix and 1564.66 μg/100g in Poori mix. Though moisture content, peroxide value and microbial load of formulated premixes were increased with advancement of storage period, all the premixes can be stored beyond the period of three months with better sensory scores.
