Studies on the Yield of Sausage Casings from Sheep and Goat Intestines

Abstract
Studies on 298 sheep intestines and 136 goat intestines showed that the yields of wet casings in sheep and goats were 77.70 per cent and 77.69 percent and the yields of dry casings in the above two species were 33.65 per cent and 32.16 per cent respectively. Of the two techniques compared, the processing of intestinee into wet casings withing 3 to 4 hours of slaughter was found to be superior in yield than processing of intestines following overnight aging.
