Effect of Packaging Materials on Quality Attributes of Wild Pomegranate (Punicagranatum L.) Powder during Storage

Abstract
The present investigation entitled “Effect of packaging materials on quality attributes of wild pomegranate (Punicagranatum L.) powder during storage”. The anardana powder was prepared by using fresh arils treated with 1% KMS and hot water blanching, dried in cabinet drier at 60±5 °C, packed in different packaging materials i.e. LDPE, ALP, Glass jar and then stored for a period of 90 days at ambient condition. The powder was subjected to physico-chemical, microbial and sensory evaluation at an interval of 30 days. The highest mean moisture content of 5.45 per cent and reducing sugars 19.32 per cent were recorded in treatment T4 (HWB:LDPE). Treatment T3 (1% KMS:Glass jar) recorded highest titratable acidity of 10.66 per cent, total sugars 22.28 per cent, ascorbic acid 12.01 mg/100g, antioxidant activity 55.18 per cent and total phenols 117.88 mgGAE/100g. However, with the advancement of storage period a decreasing trend was observed in titratable acidity, total sugars, ascorbic acid, antioxidantactivitiy and total phenols whereas, moisture content and reducing sugars were increased during 90 days of storage period. No microbial count was observed at initial days of storage however during 90 days the lowest total plate count of 0.032 × 104cfu/g was recorded in treatment T3(1% KMS:Glass jar) and highest lowest total plate count of 0.075 × 104cfu/g in treatment T4(HWB:LDPE). On the basis of sensory evaluation treatment T3(1% KMS:Glass jar) was found to be superior, scoring 7.11 for color, 7.00 for texture, 7.09 for taste and 7.06 for overall acceptability during 90 days of storage period. Storage studied revealed that all treatments could be stored for 90 days without affecting quality attributes.
