Abstract
Modern agriculture rediscovered amaranths grains, as amaranth has astounding nutritional properties because of the good amount of quality protein (16–18%) and amino acid composition i.e. lysine and tryptophan content, which is low in other cereals. Worldwide demand of amaranth grain is increasing due to remarkable nutritional characteristics, industrial and pharmacological applications. Amaranth has important role in actions against hunger and malnutrition. The objective of present work was development of value added amaranth seed based products i.e. instant mix and determine their quality characteristics, shelf life (90days) and consumer acceptability. Four instant mixes that is flour mix, idli mix, khamman mix and cake mix were prepared. Value added amaranth seed incorporated instant mixes were standardized by incorporating amaranth seed in different combinations i.e. 20, 30,40,50,60 and 70 per cent. Organoleptic score illustrated that 50 per cent incorporation of amaranth seed flour in flour mix and cake mix and 40 per cent incorporation of amaranth seed flour in idli mix and khamman mix were found most acceptable among other level of incorporation. All selected instant mixes were stored in high density polythene (HDPE) packets by vacuum packaging and heat sealing methods under room temperature for a period of three months. Physical properties revealed that amaranth seed had the thousand kernal weight0.530.01g, thousand kernal volume 0.720.01(ml), bulk density 0.710.01g/ml, swelling index 0.670.03 and hydration index0.800.03. Regarding functional properties water absorption capacity, oil absorption capacity, least gelation concentration, foaming capacity, foaming stability were found to be 134.020.02 per cent, 143.620.01 per cent, 11.010.03 per cent, 13.720.01 per cent and 85.16 0.02 per cent respectively. Nutrient composition of amaranth seed moisture, protein, fat, crude fiber, ash, 172 carbohydrate and energy contents were found to be 5.110.02g, 13.930.04g, 4.360.02g, 4.230.02g, 0.620.03g, 71.740.04g and 381.980.15 kcal per 100g.Amaranth contain good amount of calcium (131.510.03mg), iron (7.910.03mg) and phosphorus (389.910.04mg). Mineral contents were found to in range between 68.47 to 216.22mg calcium, 3.85 to 11.95mg iron and 219.45 to 382.84mg phosphorus in formulated instant mixes. The total antioxidant activity and antinutrient content of the developed instant mixes ranged between0.30 to 2.38mg/ml and 0.52 to 4.53mg per 100g.Storage study of instant mixes depicted that moisture content significantly change while no change was observed in peroxide value during storage period for household and vacuum packaging. Sensorial scores were decreasing with time but acceptable during entire storage period. Vacuum packed incorporated instant mixes scored highest than heat sealed products. Total bacterial counts were detected during storage period but values were in safe limit for consumption. Consumer acceptability scores revealed that all developed instant mixes had good acceptability and were willing to purchase, if available in the market. Thus, it can be concluded from the above results that the developed mixes wererich in macro and micro nutrients, good in acceptability, budget friendly and safe for human consumption at least for three months of storage period.
