Abstract
The present study was conducted with the aim to compare the food safety knowledge, attitude and practices of street food vendors and small scale restaurant owners. For this purpose, Udaipur city was divided into five zones and from each zone 20 street vendors and 20 small scale restaurants were selected, thus constituting a sample of 200. Two tools were developed, structured questionnaire which included statement related to general information, knowledge, attitude and practice and an observational checklist which was used to verify the data reported by the respondents. The analysis of data was done using frequency, percentage and mean±SD score and independent “t” test was applied to find the significance of the difference between knowledge, attitude, practice and observation score of the two groups. The results showed that knowledge of both the groups differ significantly with overall knowledge mean score of 14.09±3.97 (street vendor) and 15.52±4.40 (restaurant owners) out of total score of 20. Food safety attitude of the respondents was good with mean 75.22±9.45 (street vendors) and 75.04±14.2 (restaurant owners) out of total score of 95 and the difference between them was found non-significant. Restaurant owners (78%) followed average food safety practices with mean score 27.24±3.17 while practices followed by street vendors were poor (70%) with mean score 31.48±3.43 out of total 45, which was significantly different. Whereas the observed practices were poor with mean 7.83±4.15 and 10.05±3.93 out of 24, respectively and differ significantly. This exhibits that there was poor implementation of the food safety knowledge. It can be concluded that food safety approaches of both street food vendors and small scale restaurant owners were not in accordance with FSSAI standards, but in comparison restaurant food was safer.
