Abstract
The present investigation on “Preparation of shrikhand by using guava pulp” was carried out at the laboratory of Department of Animal Science and Dairy Science, M.P.K.V.,Rahuri during the year 2011-12. It was intended to asses possibility and level of guava pulp that could be effect on quality of product. The product preapared by using 35 per cent sugar and 20 per cent guava pulp secured the highest organoleptic score. Addition of guava pulp in shrikhand had significant effect on the chemical composition of shrikhand.
