Abstract
Chicken meat halls from broiler meat were prepared and incorporated with omega - 3 fatty acid rich sources and the storage qualities were studied with the addition of Indian gooseberry as a natural antioxidants. In experiment I, chicken meat balls with four types of formulations (incorporating flaxseed oil with or without walnut) 0.04 per cent flax seed oil (FSO) and 4 per cent walnut (WN), 0.4 per cent FSO and 3 per cent WN, 1.2 per cent FSO and 2 per cent WN, 5 per cent FSO and 0 per cent WN, and a control (without flaxseed oil and walnut) were prepared to enrich with omega-3 fatty acids. The samples were analysed for physico- chemical and sensory quality.
