Abstract
The present study was carried out at the Department of Horticulture, College of Agriculture, Rajasthan Agricultural University, Bikaner (Rajasthan) during 2006-07. The experimental material consisted of three cultivars of aonla and six recipes of different beverages (squash, syrup and nectar) and chutney. There were 18 treatment combinations with three replications. The experiment was carried out in completely randomized design with factorial arrangement. The fruits of aonla cultivars were analysed for chemical characters at full maturity. The value added products prepared from different cultivars and recipes were also analysed periodically at 30 days interval for their various physico-chemical constituents parameters.
