Abstract
The present study was conducted to develop an lota-carrageenan based film incorporating Indian gooseberry (Phyllanthus emblica) extraet and garlic (Allium satívum) oil and to assess its effect on the shelf life of chicken nuggets stored at 4 at 1°C. The shelf life of uncoated chicken nuggets stored after wrapping With different earrageenan films developed, víz., carrageenan, carrageenan-Indian gooseberry extract and carrageenan-garlic oil were compared with those coated with a carrageenan coating solutions with Indian gooseberry extract and garlic oil.
