Abstract
The present research work was undertaken to develop the technology of preparation of aonla juice based carbonated Health drink, to evaluate chemical and sensory properties of carbonated beverage to study changes in composition and quality of carbonated beverage during storage. Aonla being astringent and Aloe vera being unpalatable are not consumed in raw form. However, they posses unique medicinal and therapeutic values. Hence, an effort has been made to process them into a carbonated beverage to enhance their consumption for health benefit. The carbonated beverage was prepared with 10 % aonla juice (Var. NA-7) and 1.2 % ginger juice. The protocol standardization was done by evaluating three factors i.e. aonla juice extraction methods [hot (E1) and cold (E2)], packaging material [glass bottle (P1) and pet bottle (P2)] and aloe juice levels [zero (Ao), one (A1) and two (A2) per cent] in FCRD method. Thus 12 treatment combinations were replicated four times. Furthermore, two storage conditions i.e. ambient and cold were compared by 't' test. Similarly, periodical observations were recorded at 15 days interval for biochemical parameters and sensory properties during 90 days storage. During storage, increase in TSS, pH, reducing sugars, non-reducing sugars and total sugars was recorded while there was a decrease in acidity and ascorbic acid content. The rate of decrease was higher at ambient storage condition than at cold storage and also at control treatment than at one and two per cent aloe level. Sensory score of carbonated beverage decreased gradually for colour, falvour, taste and overall acceptability in all treatments during storage, whereas microbial count increased during storage. Degradation in carbonated beverage was at a rapid rate at ambient storage condition than at cold storage. On the basis of three factor evaluation, protocol was standardized with treatment combination E1P1A0 for pure aonla based carbonated beverage, while with treatment combination E1P1A2 for Health drink by blending 2 per cent aloe juice into aonla beverage.
