Abstract: A study was undertaken to assess the quality of chicken from three different sources i.e Large scale processing centers, Hygienically maintained chicken shops and Road side Slaughtering stalls in and around Greater Hyderabad Municipal Corporation, Hyderabad, India. The total viable count in chicken samples was 4.43x105+0.38x105CFU/gm, 6.53x106+0.86x106CFU/gm and 3.86x107+ 1.08x107CFU/gm from Large scale processing centers, Hygienically maintained chicken shops and Road Slaughtering stalls respectively. The Total coliform count, Feacal coliform count and Yeast and moulds counts were 2.18x104 + 0.46x104 CFU/gm, 9.86x103+ 0.41x103CFU/gm and 1.36x103+0.38x103CFU/gm respectively from Large scale processing centers, 8.93x104+0.41x104CFU/gm, 1.28x104+ 0.49x104CFU/gm and 3.86x104+0.45x104CFU/gm respectively from Hygienically maintained chicken shops, where as 5.68x105+0.36x105CFU/gm, 2.38x105+ 0.47x105 CFU/gm and 4.38x105+ 0.50x105CFU/gm respectively from Road side Slaughtering stalls. The incidence of pathogens like S.aureus, E.coli, Salmonella spp, Clostridium spp, Listeria spp and Campylobacter spp was 84%, 96%, 76%, 68%, 56% and 42% respectively from Large scale processing centers, 96%, 100%, 88%, 78%, 64% and 50% respectively from Hygienically maintained chicken shops where as 100%, 100%, 92%, 84%, 70% and 56% respectively from Road side Slaughtering stalls. The counts S.aureus, E.coli, Salmonella spp, Clostridium spp, Listeria spp and Campylobacter spp were 5.18x104+0.41x104 CFU/gm, 1.21x104+0.56x104 CFU/gm, 3.86x102+ 0.37x102 CFU/gm, 1.28x102+0.36x102 CFU/gm, 8.68x102+ 0.48x102 CFU/gm and 2.36x102+0.34x102 CFU/gm respectively from Large scale processing centers, 3.86x105+0.51x105CFU/gm, 9.86x104+0.41x104CFU/gm,9.86x102+0.41x102CFU/gm, 7.8x103+0.41x103CFU/gm, 1.83x103+ 0.41x103CFU/gm and 4.86x103+0.46x103CFU/gm respectively from Hygienically maintained chicken shops where as 4.86x106+ 0.38x106CFU/gm, 4.8x105+ 0.48x105 CFU/gm, 4.86x103+0.51x103CFU/gm, 4.86x104+ 0.58x104CFU/gm, 9.8x103+ 0.37x103 CFU/gm and 9.6x103+ 0.41x103CFU/gm respectively from Road side Slaughtering stalls. All the microbiological parameters were high in the chicken samples from Road side Slaughtering stalls, Least in the samples from Large scale processing centers and in between Hygienically maintained chicken shops.
