Abstract: Theeffectofultraviolet(UV-C)andthermaltreatmentofmosambijuice(citruslimetta)on physiochemical properties (viz. pH, total soluble solids (TSS), titrable acidity, total color difference,ascorbicacidcontent)werestudiedduringthisresearchwork.Theprocessconditions forultraviolettreatmentweresamplethickness(1,2,3mm),treatmenttime(15,30,45min)and distanceofsamplefromlampsource(10,20,30cm).Whereas,forthermaltreatmenttheprocess parametersweretemperatures(60,70,80°C)andtreatmenttime(5, 10, 15min).Theresult obtainedfromthisstudyshowedthattheultraviolettreatment(UV)doesn’thaveanysignificant effectonpH,TSS,titrableacidityofmosambijuice.However,theUVtreatmentconditionshad significanteffectontotalcolordifference(AE*),ascorbicacidofmosambijuice.Further,the thermaltreatmentshowedsignificanteffectonpH,TSS,titrableacidity,totalcolordifferenceand ascorbicacidcontentofmosambijuice:ThemaximumchangeinpH,TSS,titrableacidity,total colordifferenceandlossofascorbicacidcontentofmosambijuiceafterUV-Ctreatmentare0.15, 0.2,0.018%citricacid,0.98and2.7%respectively.Similarly, ThemaximumchangeinpH,TSS, titrableacidity,totalcolordifferenceandlossofascorbicacidcontentofmosambijuiceafter thermaltreatmentare0.47,0.35,0.42%citricacid,5.1and12.1%respectively.Incontrast,the deteriorationofnutritionalpropertiesinthermaltreatmentwashighascomparedtoultraviolet treatment.Theobtained results indicates that thechanges inphysio chemical properties of mosambijuiceinthermaltreatmentishigherthanUV-Ctreatment.Theaboveresultssuggested thatultraviolettreatmentwasfoundsuperiorbasedonchangesinphysicalpropertiesofmosambi juice.
