Studies on influence of postharvest treatment of putrescine (PUT) and spermine (SPM) on quality and shelf life of banana (cv. Grand Naine) fruits under ambient and cold storage was carried out in the laboratory of Department of Post Harvest Technology, Kittur Rani Channamma College of Horticulture, Arabhavi, during the period from 2014 – 2015. The washed and air dried banana fruits were treated with putrescine (1 mM, 3 mM and 6 mM) and spermine (1 μM, 5 μM and 10 μM). After imposition of treatments the cut portion of hands were plugged with carbendazim (0.1%) treated cotton, packed with polythene cover, placed in CFB and stored at ambient (30 0C) and cold (13 + 1 0C) conditions separately. Under ambient condition, the 1 mM PUT and 5 μM SPM recorded the minimum cumulative physiological loss in weight, respiration rate, pulp to peel ratio, ripening index, TSS and sugars and maintained the maximum ascorbic acid, starch and titratable acidity. These two treatments registered the lowest value for L*a* b*c* and highest value for h0. The shelf life of 15.80 days was recorded by 1 mM PUT and 15 days by 5 mM SPM In another experiment under cold storage the 5 μM SPM treated fruits recorded minimum respiration rate, physiological loss in weight, pulp to peel ratio, ripening index and maximum firmness at 28 + 5 days of storage period. Also delayed colour changes (L*, a*, b*, C* and h0), registered lower TSS, sugars per cent, higher titratable acidity, ascorbic acid and starch content were found after 5 μM SPM treatment. Moreover higher organoleptic scores were observed in spermine treated fruits. The effect of 1 mM PUT treatment on banana fruits found similar to 5 μM SPM treatment. The 1 mM PUT and 5 μM SPM treatments would be beneficial in regulating the physico-chemical changes and delaying the ripening of banana cv. Grand Naine, thereby extending the useful life of fruit.
